Because I haven't read the books and don't intend to do so in the immediate future: Is the show veering further and further away from the books as the show catches up to the arcs in the books?

That's yone way of putting it. Another would be that it took a hard right at the beginning of the season and wondered off into the Land Of Do As You Please (V for Vendetta fans? Anyone?) to the point that its got very little to do with what's going on in some parts of the books.

The books are also not finished yet, so in some of the storylines the plot is past where the books ended. Which makes me wonder how the show might start influencing the books. Will GRRM have to out dismal the show?

I definitely think it's a misinformation campaign.
Also it's totally the show is the show and the books are the books now. I sort of think it will dovetail in some ways and do something else completely in others, and I have no way of knowing which will be which.

I want to stop watching the show, just so I'm not accidentally spoiled (or contaminated) by plot points the show will hit that will more than likely end up in the books.

A little bit late to the party because of being very very busy when the actual season ran.
I really disliked the show veering away from the books but less for "book-purist"-reasons than personal ones. Since I know the contents of the show are quite triggering sometimes, up until now I could kinda use the books as a "pre-screening" and knowing ahead made it easier to get through the unpleasant bits. And then they dropped Shireen, Sansa and that gross paedophile-abusing-children-scene on us. Oh and Cersei and Jaimes daughter died too in a very obvious and ham-handed way. And Gilly had to be rescued from almost-rape.
I agree with the people who complain about Sansa being more upsetting in that position than Jeyne Poole but it isn't really about that. This season just heaped objectification and sexual violence onto its female characters with pretty much every episode, often very clearly for the advancement of the male characters plotlines. When the camera veered away from Sansa's face to focus on Theon is when I hissed and yelled at the TV in frustration and indignation because HOW DARE YOU. How dare you put Sansa in that position and then not take responsibility for it and look away instead of sticking with her until the end? How fucking dare you prioritize Theon fucking Greyjoy's pain in that situation above hers? I think the reason it got to me so hard is that it's so damn representative of our culture in general, willing to exploit sexual abuse for the titillation and shock value but never willing to take the consequences for it or suffer with the abused, instead expecting them to quietly slink off and process their feelings off-screen. And fuck that noise from the very angry bottom of my heart. Yes, keeping the camera on Sansa's face would have been uncomfortable and painful but guess what, depicting abuse should be uncomfortable. I'm not going to swear on this and others may have an entirely different interpretation but I have pretty hefty feeling about which demographic's feelings you took into account and which you chose to disregard when you decided to go for that angle dear show-makers and none of it speaks to your credit.
I hated how very casually it all was approached in the name of "plot-convenience", especially in the case of Stannis. I haven't re-read the books in a bit but I'm quite certain he even spoke out against the burnings in a "more than half my men are what you call heathens, hell no"-way + all the father-daughter buildup (which were the only times we saw Shireen) which ultimately had very little payoff. So Brienne got her 'revenge' for Renly, was anyone even particularly invested in that anymore? Selyse's change of heart I actually found believable but of course what the entire man-burns-child-causes-wife-to-hang-herself plotline served was to effectively shuffle Stannis family out of sight and out of mind.

Legit just figured the ending of GoT would be that all the main characters are just ashes blowing in the wind and the people wail "WHO WILL RULE US NOW" and then suddenly the clouds at sea part and Gendry the Kingy in the Dingy majestically rows to shore
I also like how the crew of people going beyond the wall all gets together at the end, sort of like the Fellowship of the Ring except if you knew they were going to fail miserably
TBH I'm half expecting the white walker they bring back to be the reanimated corpse of YOU KNOW NUFFIN girl because that's how lame the showrunners are

Dany becoming (probably) the Final Boss after she halo effected her way through the story even to the point that the fanbase were pulling for her despite her poor leadership, petulant attitude when things don't go her way and her penchant for pissing away every victory and advantage she's ever had despite being surrounded by people who told her these things were going to happen.
